Slow Cooker Creamy Garlic Pork Tenderloin: The Ultimate Cozy Weeknight Dinner

When you’re in the middle of a busy workweek, there is nothing quite like a meal that allows you to "set it and walk away." This Slow Cooker Creamy Garlic Pork Tenderloin is the kind of low-effort, high-reward dinner that feels like a warm hug. By simply pouring a jar of store-bought Alfredo sauce and a few pantry staples over pork tenderloin, you get a meal that tastes like you spent all day in the kitchen.

To prepare this comforting dish, place 2 pounds of pork tenderloin into a 4- to 6-quart slow cooker. In a separate bowl, whisk together one 15–16 ounce jar of Alfredo sauce, ½ cup of low-sodium chicken broth, 4 cloves of minced garlic (or 1 ½ teaspoons of garlic powder), 1 teaspoon of Italian seasoning, and ½ teaspoon of kosher salt. Pour this mixture evenly over the pork, ensuring it is mostly covered.

Cover and cook on LOW for 4–6 hours or on HIGH for 2 ½–3 ½ hours, until the meat is fall-apart tender. Once cooked, let the pork rest for 5 minutes before shredding or slicing, then toss it back into the creamy sauce in the slow cooker.

This dish is wonderful served over mashed potatoes or buttered egg noodles to soak up the extra sauce, but it also pairs beautifully with steamed green beans or roasted broccoli. If you’re looking to customize your meal, you can stir in grated Parmesan for extra richness, add red pepper flakes for a bit of heat, or even toss in sliced mushrooms and carrots right into the slow cooker.

Leftovers keep well in the fridge for up to 3 days and even make excellent creamy garlic pork sandwiches when tucked into toasted rolls.

What is your favorite "set it and forget it" meal for those hectic workweeks? Let me know in the comments below!
